Preheat your oven to 400 F + line a baking sheet with parchment paper
Start by adding all of the wet ingredients to a bowl,
- 1 cup of water
- 2 Tb of butter
- 1/2 cup of milk
- 2 Tb honey
Warm all of those ingredients up (in the microwave or over the stove) but make sure they are not hot (we are about to add the yeast and it cannot be in a hot liquids or else it will die)
Once warm, add all of the wet ingredients to a stand mixer, if you have one. After the liquids have been added, add 1 TB of active-dry-yeast and combine ingredients by stirring with a fork. Let it sit for around 5ish minutes or until it becomes foamy.
Place your dough hook on and add in
- 1 tsp fine sea salt
- 1/2 tsp garlic powder
- 1.5 cups of flour ( add in slowly at 1/2 cup increments)
- if you find the dough is too sticky after you’ve added the flour, you can add up more but don’t over exceed 4 cups of flour total
Mix for 5ish minutes and then form the dough and place it into a greased bowl – let rise for 15 minutes, covered. Once complete, shape the dough and form into a log (original recipe says it should be 16 inches long). Cut into 15 or so evenly sized pieces. Roll the pieces out ( 8inches ish) and form a knot. Place on baking sheet, cover and allow the knots to rise for another 15 minutes. After the time is up, uncover and bake for 15 minutes or until golden brown
While they bake, prep the Garlic Butter – in a bowl combine . . .
- 4 TB melted butter (salted)
- 1 TB fresh parsley (finely chopped)
- 1/2 tsp garlic powder
When knots are done, brush with garlic butter and enjoy!
This meal cooks as you go! It is quick and ready almost immediately after you combined all of the ingredients
Pull out a Dutch oven or a large pot and place on your stove at medium heat and add in
- 1 chopped small yellow onion
- 3 minced pieces of garlic
- 1lb of Italian sausage ( I always add in more meat! I typically double!)
- 3 TB flour
Allow these to cook together, while mixing periodically until brown. Here is where you can add a variety of spices, depending on the meat you get and the seasoning in the meat, you may want to add a lot of spices. Spices you could consider adding at your leisure are: basil, oregano, Italian, mustard powder etc. Next, you will add in . . .
- 1 cup Heavy Cream
- 5 cup Chicken Broth
and mix! After you let this simmer for a few minutes add
- 2 cups of chopped Kale
- 2 cups of tortellini
From here, you can allow the soup to simmer for as long as you wish (kale will be cooked after 5 mins)! Watch and see the thickness of the soup as it simmers. Depending on your preference, you may want to add more chicken broth or heavy cream!
