Loaded Nachos
A quick, crowd-pleasing dinner for busy weeknights. Everyone builds their own plate, and no one complains.
Ingredients
• 1 lb ground beef (or turkey)
• 1 packet taco seasoning (or homemade blend)
• 1 bag tortilla chips
• 1 cup shredded cheddar or Mexican blend cheese
• 1 can black beans, drained
• 1 cup corn (frozen or canned)
• Toppings: diced tomato, avocado, sour cream, salsa, green onions, jalapeños, cilantro
Directions
1. Brown ground beef in a skillet until cooked through. Drain fat and stir in taco seasoning with a splash of water.
2. On a sheet pan, layer tortilla chips, beef, beans, and corn. Top with cheese.
3. Bake at 400°F for 5–7 minutes, just until the cheese melts and chips are crisp.
4. Finish with your favorite toppings and serve family-style.
Tip: Keep it simple — everyone adds their own toppings so you’re not stuck plating seven different versions.
Stuffed Peppers
Comforting, wholesome, and easy to prep ahead — perfect for a cozy night in.
Ingredients
• 4–6 bell peppers, tops cut off and seeds removed
• 1 lb ground beef or turkey
• 1 cup cooked rice (white or brown)
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 can diced tomatoes (14 oz)
• 1 cup shredded mozzarella or Monterey Jack cheese
• 1 tsp Italian seasoning
• Salt and pepper to taste
Directions
1. Preheat oven to 375°F.
2. In a skillet, sauté onion and garlic until fragrant. Add ground beef and cook until browned.
3. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
4. Spoon mixture into hollowed peppers and top each with cheese.
5. Place peppers upright in a baking dish with ½ inch of water at the bottom. Cover with foil.
6. Bake 25 minutes covered, then uncover and bake 10 minutes more until cheese is melted and bubbly.
Tip: Make extra filling — it reheats beautifully for quick lunches.
Pasta with Meat Sauce + Simple Salad
A weeknight staple – simple, saucy, and satisfying.
Ingredients
• 1 lb pasta (spaghetti, rigatoni, or penne)
• 1 lb ground beef
• 1 jar marinara sauce (or homemade)
• 2 cloves garlic, minced
• 1 tsp Italian seasoning
• Olive oil, salt, pepper
• Grated Parmesan for topping
For the salad:
• Mixed greens or romaine
• Fresh fruit with goat cheese
• Olive oil + balsamic vinegar or your favorite dressing
Directions
1. Cook pasta in salted water according to package directions. Drain (save 1/4 cup of the pasta water) and toss with a drizzle of olive oil.
2. In a skillet, brown ground beef. Add garlic and Italian seasoning, then stir in marinara and pasta water. Simmer 10 minutes.
3. Combine pasta and sauce. Top with Parmesan.
4. Toss salad ingredients together and drizzle with olive oil + balsamic.
Tip: Double the sauce and freeze half — future-you will thank you.
Steak, Sweet Potatoes & Green Beans
A nourishing, balanced dinner that feels fancy but takes minimal effort.
Ingredients
• 2–3 steaks (sirloin, ribeye, or flank)
• 2–3 medium sweet potatoes
• 1 lb green beans, trimmed
• Olive oil
• Salt, pepper, garlic powder
• Optional: butter + fresh herbs for finishing
Directions
1. Sweet potatoes: Roast entire sweet potato on a sheet pan at 425°F for 45-60 min.
2. Green beans: Add to cast iron with 1/2 cup of water, cook on medium to low heat until steamed. Drizzle with olive oil and season.
3. Steak: Season generously with salt, pepper, and garlic powder.
• Grill or sear in a cast-iron skillet over medium-high heat, 3–5 minutes per side depending on thickness.
4. Let rest 5 minutes before slicing. Serve with roasted veggies.
Tip: A pat of butter on the hot steak right before serving makes it so yummy.
Chicken Skewers, Carrots & Acini di Pepe
Light, fresh, and kid-friendly — a full meal that’s easy.
For the skewers:

For the sides:
• 1 bag baby carrots
• 1 cup acini di pepe pasta
• 1 tbsp butter
• 1 tbsp olive oil
• Salt, pepper, and a sprinkle of Parmesan
Directions
1. Reheat chicken: Heat up cast iron on medium to high heat. Reheat chicken skewers on each side.
3. Carrots: Steam or roast with olive oil, salt, and pepper until tender.
4. Acini di pepe: Boil in salted water until al dente, then drain and toss with butter, olive oil, and Parmesan.
5. Plate everything together and drizzle the chicken with any leftover juices.
Tip: These skewers also work beautifully for a quick lunch — they reheat without drying out.
